Lean and Green Beef and Zuchini
One tablespoon of finely chopped green onions
One-quarter cup of diced tomatoes
Quarter cup of chopped and deiced mushrooms
Cubed zucchini – one-quarter cup cubed
Five ounces of finely ground lean ground beef.
One extra large green, red, orange or yellow bell pepper.
Take the pepper and cut off the top as you would a pumpkin at Halloween, and hollow out the contents. Blanche the pepper in water, while combining the rest of the ingredients in pan and sauté until ground beef is browned. Fill the pepper with the ingredient from the frying pan, and serve.
Tip: This type of recipe does very well if cooked the day before and put in the refrigerator, as the flavor from the stuffing will mingle over a period of time and have a better flavor when you come home and heat it up in the oven.
