One of the best things that we can do with carrot pulps is to make muesli bars out of it. Muesli bars are basically made from oats that are rolled in combination with apple and carrot pulp. These bars are also added with chopped nuts like almonds and seeds such as sesame, sunflower, linen and poppy seeds. Aside from these, muesli bars are also added with honey in order to give it a sweet and appetizing taste. Aside from these delicious bars, we can also try making macaroons out of these carrot pulps. All we need is a cup of grated raw carrots, ½ cup of water, 1/3 cup sweetener or honey, half a cup of coconut, a cup of oat flour and half a tsp of salt. All we have to do is to mix the mentioned ingredients and let it sit for 10 minutes. Once done, they can be packed in to tablespoon sizes before placed in the oven at 325 degrees for 30 minutes.
If macaroons and muesli bars are not our thing, then we can also try making carrot pulp marmalade. All we need is to have 3 oranges, 4 cups of water, 3 cups of our carrot pulp, 3 cups of honey, half a teaspoon of ground ginger and a pack of store-bought ground pectin. Once we have these items we can now begin the marmalade making by peeling all three oranges and cut the rinds into thin and narrow slices. Once done, we can cook the slices with water until they turn soft and tender. This should then be left for at least 7 hours or even overnight. Once done, we can now add the carrot pulp and let it boil for 10 minutes. While waiting, we can chop the oranges into a bowl and remove all the seeds. After that, we can now combine the oranges, lemon juice, honey, ground ginger and the pulp/peelings mixture and let it boil for another 20 minutes. Slowly we will see that the marmalade will eventually jell on its own. Once they are set, we can immediately place them in glass jars and seal. After this, we can now add our pectin; however, if we don’t have any, then we can leave it as it is.
These are just some of the special recipes that we can make out of these simple carrot pulps. As we can see, we don’t have to dispose all these carrot pulps since we can still make a lot of uses out of it. Aside from muesli bars, macaroons and marmalade, we can also try baking carrot pulps bread as well as carrot pulp cookies, which just as appetizing as the other recipes.
